Chyaang and Chicha-drinks from the East& west, an article in the Zymurgy magazine from 1994 has been delivered to my email thanks to the Seattle public library system. I read if end-to-end and it's glorious... it's everything I expected it to be an so much more. Lots of recipes, process, historical background and context and experiments. It's worth more than several hours of youtube videos.
The downside of the paper being so incredibly exhaustive and well-researched is that there's so little space for the 'step extraction 'article I was preparing to write. The context of the entire idea of my article is addressed sufficiently in two or three short paragraphs. They were both microbiologist brewers, the authors of the paper, it turns out, and they knew exactly what ' they were doing.
Only thing is, I couldn't find other papers by these two researchers due to their common names, but if I put even a little bit of effort, guessing that's not gonna be of matter anymore.
Man, I need to use the article borrowing and research librarian features of my library systems a lot more!
