In my fridge, this morning I had: the dal that I made early last week, the kinema-chickpea veggie I made a day after, and the potato-saag veggie that I made over the weekend. Plus the dessert mung pudding from last weekend, and the leftover veggies from TJ's that I unpacked and ate over the weekend because because I was sick of eating all the leftover. Also brown-rice quinoa mix as my base carb from last week. But thankfully the rice is finished.
Soo yeahhh. I have been eating leftovers for a long time, and the harder I try to avoid it by cooking new meals, I'm just adding more to the pile. But they haven't been spoiled, and I haven't gotten tired of eating any of it.
And finally, unlike two weeks ago when I was hangry because there wasn't much cooked food to eat and I was literally scrounging for any remains of edible food that might come of help, last week was one of abundance, when I was able to feed myself at a moment's notice. It did take a lot of weight off of my shoulders, and made planning easy. But...I was eating the same thingo ver and over again, so there's that too.
Maybe I should make smaller servings, but still have leftovers for a couple of meals...instead of twice as many as 'couple of' meals.
Something for me to chew on.
