I write these based on vague recollections and the visual journal I made out of the photos taken during the day.
This was gonna be my last day before the Seattle trip so I had mashed potatoes and the remaining greens for lunch. Good riddance, it took a long time to finish the mash, i need to work towards making things in smaller batches. The greens were too toothy, and the 'sauce' of tomato and chickpeas was like alright. I should try it with kimchi going forward, might be an interesting food synergy there.
In the evening I roasted a bunch of mushroom and tofu and was going to turn it into a nice dinner. The mushroom turned out so well it didn't make it out of the baking pan, and I dropped a little bit of the tofu as well. But it was all quite good, none of my groceries were remaining, and I was logistically prepared for the Seattle trip on Tuesday. I think it was tuesday, won't know until the next post, so keep reading!
