My no-knead dough, now a pancake, bread no more

I measured and poured,
and got the proportions perfect,
well almost,
because there was a bit too much salt
and slightly more vinegar than otherwise,
the amount of yeast was overdone,
and the quality of flour should have been better,
but I tried, oh I did,
to make my own no-knead bread,
after oh so many years, because it'd be handmade,
I could mix and match and finally conquer my fear
of the oven,
and the science of baking.
Alas,
it was not to be, the dough didn't rise,
it didn't glutenize, still shaggy and gloopy as always,
overfermented and no proofing happened,
too much salt and vinegar, oh dear, what did I do,
to make bread I should do it better,
but there was so much of that dough
in front of me, with nowhere else to go,
except maybe in the water(?)
I thought, so dumped couple of few cups of water
and turned it all
into a pancake mix
Added some more kodo flour mix
and now it tasted organic
a bit rustic, too
the first pancake was awful,
the second better
and so on and on,
until I was making first-rate cakes and beaks
on the pan,
some looked like pancake, some looked like naan,
but at least I knew
what I was doing, everyone.

The bread plan may now be a success,
but the pancakes are really no regret,
this is a case, of mission accomplished,
we now know how to culture yeast
and bake our own bread
without any knead.
