A salad rich in olive oil and greens is joyyy!

 made salad using chickpea, corn, lots of expensive olive oil, cucumber, amchur, and feta cheese, it was yum, added the salt/spicy things later, and then raisins too, plus tahini, why did I stop eating salads again?

Earlier today I made salad using chickpea, canned corn, lots and lots of the most expensive olive oil Trader Joe's has to offer, cucumber, feta cheese and amchur for the sourness/acidity. Didn't want to use vinegar because my kombucha overpowers everything, and I was lacking in citrus foods. Decided not to put any of the 'proper' spices like salt pepper or the tajin sauce from TJ's in there because they have salt in them and would pull water out of the cucumber and the other wet ingredients.

So relaxing, so healthy, so filling, and great for the body. And the tongue too. Smooth as it went, the tahini added another direction to the entire ingredient, reminded me of the pre-covid bean-salad days when I'd be eating the same salad for weeks. Well that misery is thankfully over, but this is the sort of misery I'm so down for! I can foresee myself sustaining on these for at least one meal a day, heck just to eat these I can take my daily food rituals to include a third meal because it definitely helps with the strong pangs of hunger and gives me enough energy to write.
